1 1/2 cups self-rising flour.
1/2 cup finely ground oatmeal
1/3 cup granulated sugar
1/2 teaspoon ground ginger
1/2 teaspoon ground nutmeg
1/4 cup butter
1/4 cup shortening
3 Tablespoons milk
2 Tablespoons dark molasses
1 egg, beaten
2 TBS confectioners’ sugar (for decoration)
Preheat the oven to 400°. Mix the dry ingredients in a large bowl then add the butter and shortening and blend in with your fingers or a pastry blender until they are well mixed. Stir in the milk and molasses.
Grease an 8-inch cake pan and turn the dough into it and spread it out evenly. Bake the cake in the preheated oven for about 25 minutes or until golden brown.
Pour the confectioner sugar into a strainer and sift it over the top of the cooled cake if desired.
Serve with a hot cup of tea.
